This is Savigny with shoulders — not the light, easy stereotype. In 2020, Les Saucours presents as ripe, savoury and surprisingly serious. Nose: raspberry, wild strawberry, cranberry compote, and cherry skins. Under that, earthy beetroot, dried rose petals, fennel seed, and chalk-dust mineral. Palate: lithe but not light — crunchy red fruit up front, followed by a firm mineral line, fine salty tannins and a spicy undercurrent of white pepper, clove and thyme. Finish is long for a village-level wine.

Domaine Chandon de Briailles is an estate whose reputation has grown steadily and deservedly over the past three decades. The de Nicolay family have been here since 1834; today it is Claude and François de Nicolay who set the direction — biodynamic farming since the early 2000s, Demeter certified from 2011, and a philosophy of minimal intervention that extends from the soil to the bottle. No added yeasts, no fining, barely any new oak. Just Pinot Noir expressing its place. Jancis Robinson has reviewed the domaine with consistent admiration, and the estate features regularly on high-end wine lists on both sides of the Atlantic — a mark of how seriously the trade takes these wines.

Claude Nicolay
Claude Nicolay & her brother, François, are the current generation in a family estate that was founded in 1834. They have small plots totalling 34 acres dotted throughout some of Burgundy’s biggest names including; Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton. Claude and François have not rested on the prestigiousfamily name (they are related to the Chandon family of Moët& Chandon in Champagne). Since 2001 they have been on ajourney towards fully biodynamic viticulture, a reaction towhat they felt was the destruction of vineyards in Burgundy through profuse spraying with chemical pesticides and herbicides. What you get here is not just a Chardonnay from the exalted Grand Cru slopes of Corton-Le Charlemagne, but a pure andhonest expression of time and place. Gently nurtured inseven-year-old barrels after a slow fermentation, it displays power and elegance from early on, developing richness and complexity as it matures in bottle.
