Semillon is the unheralded, second-in-command, variety behind white Bordeaux where it is usually blended with Sauvignon Blanc. Its strength lies in its ability to age and develop nuanced flavours when aged in oak which is why top dry whites from Bordeaux will always depend on this little known grape. Outside of France, Semillon is at its best in Australia’s Hunter Valley where it stands alone or forms a blending partner with Sauvignon or Chardonnay. Semillon’s secret weapon however is its ability to achieve a sort of super ripeness (from noble rot). It develops flavours of barley sugar and nectarines and is the star behind the famous classic dessert wines form Sauternes.
