Cabernet Sauvignon is the world's most widely recognised red grape variety — the backbone of Bordeaux's Left Bank, the engine behind Napa Valley's cult wines and a dominant force in Chile, Australia, Italy and beyond. It is a thick-skinned, late-ripening grape that produces wines of deep colour, firm tannin and remarkable longevity. The great Cabernets can evolve and improve for 30–50 years, developing extraordinary secondary complexity: cedar, cigar box, leather, graphite, dried herbs and dark spice behind the primary blackcurrant and blackberry fruit. In Bordeaux it is typically blended with Merlot and Cabernet Franc for balance and complexity. In the New World it is often made as a varietal wine, showing ripeness and power alongside structure.
