The Diatomists are a small, dedicated sherry producer working with some of the oldest soleras in Jerez — named for the diatomite, the ancient fossilised microorganism deposits found in the chalky albariza soils of the Sherry Triangle. Their Medium Singular is a Palo Cortado-influenced style: one of sherry's most intriguing and rare categories — the elegance of an Amontillado combined with the richness of an Oloroso.
Amber-mahogany in colour, it opens with complex aromas of roasted hazelnut, dried orange peel, caramel, and a saline, oxidative depth that is uniquely sherry. On the palate it is medium in sweetness — nutty, long, and beautifully balanced. Exceptional with aged hard cheese, charcuterie, walnuts, or tapas of any kind. A singular wine for curious minds.
