Palomino is the principal white grape variety of the Sherry region in southern Spain, centred on Jerez de la Frontera. While Palomino produces relatively neutral, fairly low-acid wines when made as a simple still white, it is the foundation for one of the world's most distinctive wine styles thanks to the unique ageing processes used in Sherry production. Under a layer of flor yeast, Palomino develops into the bone-dry, tangy, savoury Fino and Manzanilla styles, while oxidative ageing without flor produces the richer, nuttier Amontillado and Oloroso styles. This remarkable versatility, transforming a relatively simple grape into a vast spectrum of flavours through ageing technique alone, is what makes Palomino so important to Spanish winemaking.
