For red meat game like venison, look to bold reds with good structure and a savoury edge — Northern Rhône Syrah, Bordeaux, Barolo, or mature Burgundy all work well, their earthy, sometimes gamey notes echoing the dish itself. For feathered game like pheasant, partridge, or duck, slightly lighter but still characterful reds — Pinot Noir, Burgundy, or a mature Rioja — are excellent, balancing the richness of the meat without overwhelming it.
