Lavières is always defined by floral elegance + limestone cut, and the 2019 vintage delivers both with unusual density.

Appearance: Deep ruby with a glowing rim — richer than classic Savigny due to the warm year.

Nose: Redcurrant, wild strawberry, cranberry, and cherry stone at the core. Beneath that, crushed violet, lilac, iron filings, and a chalk-dust minerality that feels almost salty. Subtle spice notes (white pepper, clove stem, dried thyme). Zero flashy oak — the domaine refuses to polish Pinot with vanilla.

Palate: Silky entry, immediately tightened by fine, vertical tannins and slicing acidity. The fruit is ripe but not sweet; think tart red berries over crushed rock. Mid-palate shows rose petal, pomegranate skin, crushed herbs and a mineral sapidity that feels closer to Beaune-Grèves than typical Savigny plushness. The finish is tensile, floral, and saline.

This is precision over power. Beauty with backbone. Burgundy for people who value scent and structure more than juice.

Vintage Impact: 2019

  • 2019 was a hot, dry, small-crop year across Burgundy — but unlike 2018, the acidities stayed higher.
  • Warm summer + low yields = concentration + aromatic ripeness
  • Cool nights preserved acidity and finesse
  • Thick skins from stress = long-lived tannic structure
  • Limestone-rich Lavières amplified minerality instead of jam

Big misconception: Many think 2019 = plush fruit.
For some appellations, yes.
Here? It produced stony elegance with depth, like a mini-Corton without the weight.

Drinking Window

  • Start exploring: 2025–2026
  • Best drinking: 2027–2038
  • Potential peak: 2032 onward
  • Max life: 2040+

If opened young, decant at least 60–90 minutes. Otherwise, you’ll mistake restraint for lack of flavour.

Claude Nicolay

Claude Nicolay & her brother, François, are the current generation in a family estate that was founded in 1834. They have small plots totalling 34 acres dotted throughout some of Burgundy’s biggest names including; Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton. Claude and François have not rested on the prestigiousfamily name (they are related to the Chandon family of Moët& Chandon in Champagne). Since 2001 they have been on ajourney towards fully biodynamic viticulture, a reaction towhat they felt was the destruction of vineyards in Burgundy through profuse spraying with chemical pesticides and herbicides. What you get here is not just a Chardonnay from the exalted Grand Cru slopes of Corton-Le Charlemagne, but a pure andhonest expression of time and place. Gently nurtured inseven-year-old barrels after a slow fermentation, it displays power and elegance from early on, developing richness and complexity as it matures in bottle.
