Nicolas Maillet — Biodynamic Mâconnais Chardonnay
Nicolas Maillet is a biodynamic vigneron based in the village of Verzé in the Mâconnais, the southern gateway to Burgundy's Chardonnay heartland. Working on a small scale with obsessive attention to detail, he produces wines of remarkable clarity and precision — wines that sit comfortably alongside their more famous Pouilly-Fumé and Meursault neighbours while costing a fraction of the price.
His vineyards are farmed biodynamically: no herbicides, no pesticides, compost made on-site, and lunar calendar timing across all key vineyard operations. In the cellar, fermentation is spontaneous, ageing is in old oak, and intervention is minimal. The result is Chardonnay with genuine character and a strong sense of place.
The Wines
Mâcon-Verzé is the estate's flagship white: floral and mineral, with a round palate and beautifully balanced acidity. Melting Potes is a more textural, fruit-forward expression. Bourgogne Aligôté offers one of the finest examples of this under-appreciated grape — bright, zesty, and mineral. Mâcon Rouge blends Gamay and Pinot Noir for a soft, aromatic red of genuine charm.
What the Critics Say
The most telling endorsement is where the wines are served. Nicolas Maillet's Mâcon-Verzé Le Chemin Blanc appears on the wine list of Alain Ducasse at The Dorchester in London — one of only a handful of three-Michelin-starred restaurants in London — listed at £89 per bottle. It is also chosen by Jason Atherton's City Social (one Michelin star, London) and La Toque in Napa Valley.
