Natural wine is a broad term for wine made with minimal intervention in both the vineyard and the winery — typically organic or biodynamic farming, native yeast fermentation, no fining or filtration, little or no added sulphur and no other additives. There is no legal definition of natural wine, which means the term covers an enormous range of styles. What unites natural wines is a philosophy: the belief that wine should be an honest expression of place and vintage, with the winemaker's role reduced to guiding rather than directing.
