Mature, aged cheeses — think aged Gouda, vintage Cheddar, aged Comté, or Parmesan — develop concentrated, often nutty, caramelised, and savoury flavours as they age, and they call for wines with enough depth and structure to match. Full-bodied reds such as Cabernet Sauvignon, Rioja Gran Reserva, or a mature Bordeaux pair beautifully with aged Cheddar and Gouda, their tannins and developed fruit complementing the cheese's nutty, savoury character. For aged Comté or Parmesan, a structured white like an aged Chardonnay, or a fino or amontillado sherry, can be a wonderful, slightly unexpected match. Fortified wines — tawny Port, sherry, Madeira — are also classic partners for very mature cheeses, their nutty, caramelised notes echoing the cheese itself.
