Xarel-lo is a light-skinned grape from Catalonia, northeastern Spain, and is one of the region's most widely planted varieties. It is used to make various wine styles, but it is best known for its role in sparkling Cava, in which it is typically blended with two other classic Spanish grapes varieties, Macabeo and Parellada.

Xarel-lo is a white grape variety native to the Penedes region of Catalonia in northeast Spain, where it is one of the three traditional grapes, alongside Macabeo and Parellada, used to produce Cava sparkling wine. Xarel-lo brings structure, acidity and ageing potential to Cava blends, along with distinctive earthy, herbal and citrus notes. As a still wine, Xarel-lo produces medium-bodied whites with flavours of green apple, lemon, herbs and a characteristic saline minerality, often with a slightly waxy texture. In recent years, single-varietal Xarel-lo has gained recognition among Catalan producers for its ability to express terroir, particularly from old vines grown in the limestone soils of the Penedes.
