Carmenere is Chile's signature red grape variety, originally from Bordeaux where it was once a key blending grape before being almost wiped out by phylloxera in the 19th century. Rediscovered in Chilean vineyards in the 1990s after long being mistaken for Merlot, Carmenere has since become the country's calling card. It produces medium to full-bodied red wines with deep purple colour, soft tannins and a distinctive flavour profile of dark fruit such as blackberry and plum, alongside notes of green pepper, tobacco, leather and dried herbs. When fully ripe, Carmenere shows smooth fruit with a savoury, spicy finish. It pairs wonderfully with grilled red meats, barbecue, stews and dishes with a smoky or herbal element.
