François Mitjavile — Tertre Rôteboeuf, Roc de Cambes & Domaine de Cambes
François Mitjavile is one of Bordeaux's great originals — a self-taught philosopher-winemaker who, in 1978, took over his wife's small family estate in Saint-Émilion and turned it into one of the most coveted wines in the world. He has no formal oenology training. He needs none.
His philosophy is deceptively simple: "We are forbidden to create." Everything flows from the vineyard. Mitjavile harvests weeks later than his neighbours, trusting the grapes to reach true physiological ripeness before a single bunch is picked. In the cellar, the approach is hands-off — no recipe, no manipulation, just the land expressing itself through wine.
The Estates
Château Tertre Rôteboeuf is the crown jewel: a Merlot and Cabernet Franc blend from the steep limestone slopes of Saint-Émilion, capable of extraordinary depth and longevity. Roc de Cambes, his estate in the Côtes de Bourg, applies the same obsessive philosophy to produce a wine that consistently punches far above its appellation. Domaine de Cambes is the most accessible entry into the Mitjavile world — still unmistakably his, still over-delivering.
What the Critics Say
Wine Advocate has awarded Tertre Rôteboeuf scores of 94–98 points across multiple vintages, placing it among the great unclassified wines of the Right Bank. Robert Parker described the 2007 as showing "unexpected depth, purity and charm — one of the rare 2007s that actually transcends the vintage." Domaine de Cambes consistently earns 90–92 points from both Wine Advocate and Vinous.
In 2013, Mitjavile was named Winemaker of the Year by Der Feinschmecker, Germany's most influential food and wine magazine — recognition of a career defined by independence, precision, and an absolute refusal to compromise. His wines appear on the lists of two-Michelin-starred Speilsalen in Norway and Michelin-starred La Truffière in Paris.
Vinous praised the 2007 Tertre Rôteboeuf for its "lifted aromatics and graceful texture," calling it a wine of "clarity and remarkable drinkability."
