Semillon’s secret weapon however is its ability to achieve a sort of super ripeness (from noble rot). It develops flavours of barley sugar and nectarines and is the star behind the famous classic dessert wines form Sauternes.

Semillon is a versatile white grape variety best known for its starring role in two very different styles of wine: the lush, honeyed dessert wines of Sauternes in Bordeaux, and the bone-dry, age-worthy whites of Australia's Hunter Valley. In Bordeaux, Semillon is often blended with Sauvignon Blanc to add body, texture, and richness, while in Hunter Valley it's typically bottled on its own, producing wines that start lean and citrusy when young and develop remarkable toasty, honeyed complexity with age.
