Pascual Olivares Fernandez

Bodegas Olivares was founded in 1930 by Pascual Olivares Fernandez and now his third-generation grandson produces Monastrell from ungrafted vines in Jumilla — a region relatively unscathed by phylloxera — using natural yeasts to 'preserve the grape's natural character and not mask it.' These are wines of authentic Spanish character from one of the country's most interesting and underrated wine regions.
