Corvina, also known as Corvina Veronese, is one of the principal red grape varieties of the Veneto region in northeast Italy, forming the backbone of Valpolicella, Bardolino and the celebrated Amarone della Valpolicella. Corvina produces wines with bright cherry and red berry flavours, a touch of bitter almond, and naturally high acidity. Its thick skins and resistance to drying make it ideally suited to the appassimento method, in which grapes are dried for several months before pressing, concentrating their sugars and flavours to produce the rich, intense wines of Amarone and Recioto. In lighter styles such as Valpolicella Classico, Corvina shines through with fresh, juicy red fruit and a slightly bitter, almond-like finish.
