This wine is obtained from the vinification of 100% Ribolla Gialla grapes, selected and harvested in our vineyards. Straw yellow colour. Fine and persistent perlage. Elegant bouquet, floral, yeast and crusty bread. Delicate, aromatic, round flavour. Contains sulfites. Soil composition: the soil, of Eocene origin, is rich in clay which gives it the typical characteristics of perfumes and aromas present in this wine. The presence in the soil of microelements such as boron, magnesium etc., together with the typical microclimate of the area, favor the obtainment of a grape with an excellent natural alcohol content. Vinification: early harvest to obtain a sparkling base with good acidity and not too high alcohol content, soft pressing, refrigeration and static decantation of the parts in suspension, racking of the clean must, fermentation at controlled temperature (about 17°C) with the addition of selected yeasts which favor the unfolding of the characteristic perfumes and aromas. Serve at 8-10°C.

"The land in Colli Orientali is considered the best in Italy for Pinot Grigio, because of the climate and the (argile) soil. Giorgio Colutta’s vineyards are in three different locations, all within 5 minutes of each other. Giorgio rents some land in the hills near Manzano from a retired winemaker. When a friend of his got wind this land was available he immediately phoned Giorgio, arranged a meeting half an hour later, and the contract was signed on a scrap of paper out in the field! This vineyard is particularly beautiful with small rolling hills from which villages in Slovenia can be seen. The area of Coli Orientali del Friuli has a particular climate shaped by the geography of the region - the Adriatic sea on one side, the Alps on the other. The mountains protect it from the cold winds from the north, and its proximity to the sea tempers the summer heat. There is a big demand for land here with some of the bigger producers anxious to snap up any plots that become available. "
