2x Silvano Bolmida 'Bussia' 2015 - Barolo DOCG, Italy
Silvano recognised the excellent soil his father, who sold to other producers, had in Bussia, and began to make his own wine in the tractor shed in 1999. He believes that soil is crucial to Nebbiolo. Harvested in mid October, fermented naturally for a month, then aged on lees for a year in barrique, followed by two years in both large tonneaux and barrique and further fined for 14 months in bottle before release, ready to drink. Silvano Bolmida enjoys the Barolo at this stage, which he calls its 'harmonious youth'.
2x Paddy Borthwick 2018 – Wairarapa, New Zealand
The conditions here are perfect for Pinot Noir, and in this wine, the best grapes from the best plots are aged in French oak (just 30% new barrels), for 11 months before bottling. Great complexity comes from the selection of the very best of the crop.
2x Domaine de l'Hortus Grande Cuvée 2018 - Pic-Saint-Loup AOP (Organic methods)
Syrah, Grenache, Mourvèdre
There's no reason why a beautifully sited vineyard shouldn't produce outstanding wine. Grown mid-slope on dark soils: the Grenache in the north, Syrah in the south and Mourvèdre in the shade.An extended maceration period, 25-30 days, followed by six months in vats before blending, then maturing in barrique and barrel, both new and one and two-year-old, for 12 months. Wonderfully aromatic with never a hint of over-ripeness. A landmark wine from a landmark family.
2x Coriole Redstone 2017/18 - McLaren Vale, South Australia (Organic methods and Vegan)
Redstone Shiraz is produced from three different plots, each contributing distinct characteristics and giving complexity to the final blend. Redstone refers to the local ironstone so prevalent in the soils and buildings of McLaren Vale, giving richly coloured and textured wines. Aged in seasoned French oak for 12 months, this is a balanced and very drinkable style.
2x Domaine des Remizières 2017 - Crozes-Hermitage AOC, France
One of the true family-run domaines in Hermitage. Hand-harvested from gobelet or bush vines. Natural yeast and ferment and aged 15 months élevage in 600-litre oak barrels. It’s a medium-bodied, fruit-forward example of Syrah, marked by bright cherries and peppery spice. Fresh and crunchy in style. An easy qua, with some tarry and black olive notes on the finish.
2x Tahbilk 2016/17 - Nagambie Lakes, Victoria (Organic methods)
As with the Shiraz, this is fermented in the original, 155-year-old large oak vats, followed by some time in smaller French and American oak barrels. The result is a precise and elegant Cabernet Sauvignon, not over-extracted, with an excellent balance of fruit, tannin and alcohol. A real show stopper!
