From a 60 hectare winery in the southeast of Sicily, run by young winemaker sisters Marilina and Federica Paternò. Grown organically, the Grecanico grape is thought to be the sister of the Garganega grape from Soave. This a very different wine, not only because of the calcareous soil but the use of spontaneous fermentation in concrete. With 6 months in tank to fine and 3 months in bottle before release.

“History, like nature, is a teacher!” Marilina and Federica Paternò

Angelo Paternò worked for 25 years as the winemaker and technical director for the Sicilian wineries Cantine Settesoli and then Duca di Salaparuta. He then bought 60 hectares on a hill formerly known as Poggio dei Fossi in the southeastern Sicilian province of Siracusa, near the town of Pachino, where he thought the land was one of the best viticulture areas in Sicily. The vineyards are surrounded by the UNESCO World Heritage Site or Noto.

Angelo handed the reins over to his daughters, Marilina and Federica, who have been farming organically since the vineyard was established in 2001. You will find existing saplings that are between 40 and 50 years old united in a classic system of vines grown together with fruit trees. Their philosophy is simple: absolute respect for the earth. The climate in Sicily works to their advantage in making wine with as little intervention as possible. Their modern approach is combined with traditional winemaking techniques such as concrete tanks, drying grapes out in the sun and extended skin maceration for the white wines.

The attention paid to the care of the vines is the same that is found in the processes that are carried out inside the cellar, up to the final wrapping, in fact, recyclable glass bottles are used as well as the paper for labels which is strictly paper natural recycled and the stoppers are in natural cork, all in line with the production methodology adopted.
