Chaval Blanc. The iron-rich red soil is unique in Saint-Émilion, helping the grapes fully ripen
even in difficult years. The vines are farmed organically using biodynamic methods.
Fermentation is spontaneous in concrete vats, ageing for 12 months in oak. The palate evolves
from sweet fruit to cedar and vanilla before returning to fruit for a very long finish.
