Food Pairing
Master of Wine, Mark Savage, has made a wine he has been dreaming about for the past decade. This passion project wine is named Pax in reference to the Benedictine Monks that started cultivating vines in 1139. This Laski Riesling, also called Olasz- or Welsch Riesling, is an excellent plant in its own right and a most important ingredient to this blend. The blend is 40% Sipon (Furmint), 30% Sivi Pinot (Pinot Gris), 8% Welsch Riesling and a touch of 2% Traminer, which lends an extra sense of place given the grape’s long history as a traditional variety in this part of Europe. Fresh with stone fruit texture.
