This wine is made by brothers, James and Matt Dicey, who have worked Pinot Noir since they started in South Africa before coming home to Central Otago 20 years ago. They are pioneers in Bannockburn and now working their own land. The fruit gets 28 days skin contact then 12 months in barrel before natural
malolactic fermentation. Dark fruit and grainy texture with seductive savoury nuances and an acid core sit well with fruit character. Nicely risky with an impressive finish.

''We try to be as true to the site as possible. With high-quality grapes, minimal intervention is necessary in the winery. We want to create wine that is the voice of the vineyard,'' says James, who works closely with his brother Matt in both the vineyard and the winery. Otago Daily News.

Ceres started as a Dicey family passion project and is now a world-class, award-winning winery run by Robin Dicey and his two sons, viticulturist for Mt Difficulty James and winemaker Matt. The wine is adorned in the artwork of James wife, Odelle Morshuis. The Dicey family combines ethical viticulture with minimalist winemaking techniques to craft wine in partnership with Ceres, the Roman Goddess of Agriculture. Ceres is also the region in South Africa where the Dicey family originates.

Ceres is based in Bannockburn, Central Otago and sources grapes from their four vineyards: Full Circle, Swansong, Black Rabbit and Inlet. Its first commercial vintage was in 2006. Bannockburn has very differentiated soil types, which means grapes from various vineyards will produce wines with varying flavour profiles. The Dicey brothers believe that the "answer lies in the soil."

Ceres is all about quality and making wines that reflect the vineyard and the season. Around 70% of Ceres' production is Pinot Noir, with Riesling and Pinot Gris making up the balance.

Ceres is a fully sustainable vineyard. ''We are one step on the journey. We are doing this for our grandchildren and beyond,"' James Dicey.
