The Syrah/Shiraz grape’s thick skin gives it the ability to withstand the Australian sun. The tough hide protects the juice inside, allowing it to get really ripe and develop deep and intense fruit flavours. The skins in turn provide a wealth of tannins which help the wine to stand up to heavy oak ageing and where it acquires those beautiful spicy and herbal characteristics.

However, it’s very easy for Shiraz to become jammy and confected, a common trait in industrial brands.
